Orange Spinach Salad with Toasted Almonds

Ingredients

  • 6 cups spinach or your choice of salad greens
  • 1 cup orange sections
  • 6 strawberries sliced
  • 1/2 cup toasted almonds

Optional Additions:

  • shredded cheese
  • cooked chicken
  • bacon

Salad Dressing:

Instructions

  • Wash and dry spinach. Top with orange sections, sliced strawberries, and toasted almonds. Drizzle with Orange Vinaigrette or the salad dressing of your choice.

Notes

We recommend using organic ingredients whenever possible.
I prefer using mandarin or tangerine oranges since they peel and separate into sections so easily, but any kind of orange will work!
Toasting almonds is super easy and quick ... just make sure you watch them like a hawk since they can turn from golden to burnt quickly! Preheat your oven (I use my toaster oven) to 350 degrees F. Place sliced almonds on a baking sheet and cook for 3-4 minutes or until lightly golden. Remove from the oven immediately and cool.
Serves 4 as a side salad or 2 as an entree.
