Today’s recipe may be short, but PLEASE don’t let brevity give you ANY CAUSE to pass over these little roasted vegetable sandwiches! They are truly amazing. Little bundles of joy! Super delicious! Simply YUM-MY!
Many of you know by now of my fondness for roasted veggies. Earlier this week I shared more about why roasted veggies taste so great and my recipe for a Roasted Vegetable Tian. And we’ve shared other recipes describing roasted veggie as “nature’s candy.”
Hopefully you believe me and you’ve given roasting vegetables a try. But if you haven’t (YET), I’m giving you another reason to get cooking—Roasted Vegetable Sandwiches!
Now the vegetable sandwich has been looked down upon with disdain by many for far too long. Not only have most of us been trained to love meat since our childhoods, but let’s face it, if you order a vegetable sandwich when you’re out with friends or family, you’re bound to get a look from someone. Well, perhaps that just happens to guys since vegetable sammies (yes, that’s slang for sandwiches) aren’t seen as “macho.”
Isn’t this crazy? There couldn’t be a nobler meal than a vegetable sandwich. Unfortunately beef marketers have declared meat macho and junk food marketers have cast veggies aside as lame. Honestly though, we just need to dismiss this as PURE insanity!
Alas, I’ve digressed. Let’s get back to this amazing sandwich!
Now while you can make a vegetable sandwich from a lot of different kinds of veggies both cooked and raw, I highly recommend you try my roasted vegetable tian recipe and plan for leftovers. These thin slices of veggies fit so well in a pita pocket or on bread. Eat the sandwich “naked” or add some condiments of your choice. Here’s the recipe:
- Whole Wheat pita rounds or whole wheat bread
- Roasted Vegetable Slices
- Slice whole wheat pita rounds in half and open.
- Fill with slices of roasted veggies.
- Season with salt, pepper, or your favorite condiments (see the notes for some ideas).
Although pictured on pitas, and high quality whole wheat bread will work https://edle....cka-viagra/. I just find that the pita rounds provide enough substance to hold these veggies sandwiches without becoming too "bready."
Some condiments I enjoy on these sandwiches are traditional hummus, beet hummus, a drizzle of salad dressing, your favorite mustard, or a light schmeer of cream cheese or mayonnaise.

- I really like this sandwich on pita bread. Unfortunately there are a lot of highly processed pita breads out there that aren’t very good for you. Two options that I like are Food for Life’s (Ezekiel 4:9) organic pocket bread and Trader Joe’s whole wheat pita bread (although not organic, it has a short, clean label).
