Lemon Pepper Green Beans

This is a simple, easy recipe to get your kids involved in making vegetables.
Ingredients:
  • 1 pound green beans or haricot vert, trimmed and rinsed
  • 2 tablespoons butter
  • 1½ tablespoons lemon juice (about a half of one lemon)
  • Salt and pepper to taste
Optional Garnish:
  • Sliced almonds or pine nuts, sautéed lightly in olive oil until lightly brown
  • 2 shallots, thinly sliced and sautéed in olive oil. When shallots are tender and translucent serve on top of green beans and add ½ cup of diced tomatoes.
  • 1 teaspoon lemon zest
  • ½ teaspoon crushed red pepper
Instructions:
  1. Cook beans in 4-quart saucepan of boiling water for about 5 minutes. Beans should be bright green, tender, but still have a crunch when done!
  2. Drain water.
  3. Add butter, lemon juice, and season to taste.
  4. Garnish if desired.
Notes:
We recommend using organic ingredients when possible.

You may also choose to steam your green beans. If so, place the green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 8-10 minutes.
