Recipe: Roasted Vegetable Sandwiches
Recipe type: Lunch
  1. Slice whole wheat pita rounds in half and open.
  2. Fill with slices of roasted veggies.
  3. Season with salt, pepper, or your favorite condiments (see the notes for some ideas).
We recommend organic ingredients if possible.

Although pictured on pitas, and high quality whole wheat bread will work. I just find that the pita rounds provide enough substance to hold these veggies sandwiches without becoming too "bready."

Some condiments I enjoy on these sandwiches are traditional hummus, beet hummus, a drizzle of salad dressing, your favorite mustard, or a light schmeer of cream cheese or mayonnaise.
