My whole family loves pasta, so I’m always on the lookout for a new pasta creation to try out at home. I recently was out to dinner and tried a bite (or two) of a friend’s Gorgonzola Pasta dish. After asking the chef about his recipe, I came up with my own restaurant-inspired version. And voilà my Gorgonzola Pasta with Vegetables recipe was born!

I’m always mixing up different salad dressings. Honestly, there isn’t an easier way to add flavor to your salad. AND, you avoid all those processed ingredients that are in most bottled dressings!
My latest creation is an Orange Vinaigrette! I use it to dress my Orange Spinach Salad with Toasted Almonds, and WOW is it amazing.
I love spinach! That wasn’t always the case, though. Growing up it was one of those veggies that got pushed around my plate. 😮
These days, though, I love spinach in so many different ways—sauteed, creamed, in soup and smoothies, and especially as a base for salads like my Orange Spinach Salad with Almonds and an Orange Vinaigrette. Yummm!
